MEDITTERANEAN DIET-MEAT

CHICHEN WITH OLIVES
SERVINGS: 4
INGREDIENTS
a chicken in small portions
a teacup olive oil
2 green peppers
2 onions in thin pieses
two garlic gloves in thin pieses
a tomato thinly cut
a cup of red wine

Lay the chicken it in a pot in which you have already poured a teacup of olive oil. Cut green peppers, red peppers, onions and garlic cloves. Take out the stones from the olives and throw them over the chicken, together with a all other ingredients. Add two ripe tomatoes thinly cut, a large cup of red wine and bake in the oven for about 1 1/2 hour, until it absorbs the liquids.

FRIKASSE (Lamb and garden greens in a creamy lemon sauce).

Servings: 5

Ingredients:
1 batch Avgolemono Sauce
1/2 cup Olive oil
3 cup Green Onions Chopped
2 lb Lamb leg
3-4 dill
1 whole Lemons Squeezed
2-3 Romaine Lettuce Chopped
1-2 pinch Pepper To taste
2-3 pinch Salt To taste
1 tomato squeezed (optional)

For the Avgolemono = in a small bowl put 2 whole eggs with a tablespoon water and stirring with a spoon then add 1/2 cup of lemon juice (1 whole lemons squeezed)

Directions:
Cut the lamb in portions. Brown in a pot using the oilive oil. Add salt, pepper, the onions, dill and very little water. Cover and simmer for about 1 hr. Add lettucce and tomato and boil for 30 min. Prepare the avgolemono sauce. Pour the avgolemono in the pot(out of fire), simmer lightly and serve hot.


GIOUVOURLAKIA AVGOLEMONO (Meat and Rice Meatballs)

INGREDIENTS
1/4 cup Rice
1 small onions (chopped)
3 tablespoon Parsley (chopped)
2 tablesspoon Dill (chopped)
2 tablesponn olive oil
5 cups water
salt and pepper to taste

For the avgolemono (egg-lemon)= in a small bowl put 2 whole eggs with a tablespoon water and stirring with a spoon then add 1/2 cup of lemon juice (1 whole lemons squeezed). Be careful before adding avgolemono slowly trickle 2 ladle full of broth to temper the eggs (beating constantly to prevent the eggs from scrambling).

Directions:
In a large bowl mix the meat, rice, onion, parsley, dill, oil and salt and pepper to taste. Mix very well and shape into small balls. In a large pot add the stock or water along with the butter and bring to a boil. Add the meat/rice balls and cook at a simmer for about 30 minutes. Add 3 tablespoon rice for 30 min. Add avgolemono (out of fire).
