MEDITTERENEAN DIET- FISH

BAKED FISH WITH TOMATO AND OLIVE OIL SAUCE

INGREDIENTS
4-5 slices of sea bream or grouper
two tomatoes
a cup of extra virgin olive oil
a tablespoon of thinly cut parsley
half of a lemon
salt and pepper

Wash, salt and bake 4-5 fish slices on the grill. In a bowl, mix tomatoes with olive oil, parsley, juice of lemon and salt and pepper.

Serve the fish while still hot, after you cover it with the tomato and olive oil sauce.

BAKED SALMON WITH OREGANO

Servings: 4 people

INGREDIENTS

2 teaspoon olive oil
4 skinless salmon fillets
2 tablespoon lemon juice
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon butter, cut into small pieces
1 teaspoon fresh parsley, chopped (optional)

Directions:
Preheat the oven to 375°F. Grease with oil a baking dish and put the fillets in a single layer. Arrange the fish in the dish and turn to coat with the oil. Sprinkle with the lemon juice, oregano, salt, and pepper. Dot with the butter and cover with foil.Bake 20 to 25 minutes. Serve topped with the pan juices and parsley (if using).
